May I ask, why are potatoes and carrots singular, while tomatoes are plural? Is there a list of things which are counted as singular?

That is a very good question. I actually once realized that I hadn’t made that 100% clear in that episode.
In Ukrainian, we have uncountable nouns, just like in English: meat, flour, milk, etc. Картопля і морква are uncountable nouns too! Although there is a way wo say a potato (картоплина) and a carrot (морквина), картопля і морква are uncountable singular nouns that mean many potatoes/carrots . I hope it’s clear for you now!
